Ingredients:
A handful of spinach
3 dried Shiitake mushrooms
An egg, beaten and seasoned
Bowls of soup stock, preferably homemade
Condiments: Salt, sugar, oil
Cooking steps:
1. Rinse off the spinach, discard the root and cut into segments.
2. Soak Shiitake mushrooms in water ahead of time, remove the stem and roughly slice up.
3. Beaten the egg, lightly season to taste with a pinch of salt and set aside.
4. In a wok, add oil, when hot, drop in Shiitake mushroom slices, spinach segments and stir-fry till soft.
5. Combine with 2 bowls of soup stock and egg liquid, bring into a boil and then go on for at least 15 minutes or so.
6. Season with a dash of salt and sugar. Serve and enjoy.

A King oyster mushroom,
Condiments: Salt, chicken powder, oil, ground pepper
Cooking Procedures:
1. Rinse the cucumber, remove the bottom portion of King oyster mushroom, then roughly cut into slices and keep aside.
2. Heat the wok, drop in garlic slices and fry till fragrant (omit garlic if not desired), then combine with King oyster mushroom slices, cucumber slices and toss about for 2 minutes over high flame.
3. Lightly season to taste with a pinch of salt and chicken powder. Before serving, sprinkle with a handful of ground pepper and mix well.

A pack of Enoki mushroom
A handful of chopped onion
Condiments: Oil, salt, sugar, chicken powder, cooking wine, soy sauce, vinegar
Cooking steps:
1. Peel the potato, evenly cut into slices and then soak in water so as to remove the starch.
2. Cut off the root of Enoki mushroom, rinse mushroom off and tear into clumps.
3. In a frying pan, add oil, when hot, drop in chopped onion and stir till fragrant, then combine with shredded potato, Enoki mushrooms and stir for 3 minutes or so over high flame.
4. Season to taste with a dash of salt and sugar, sprinkle with a spoonful of soy sauce, vinegar and stir evenly. Serve.
1. Reasonably choose culivation time: Pholiota nameko falls under with low-temperature type mushroom, during the growth phase of mycelia, ideal temperature range is at 20-25 degrees Celsius, mycelia stop the growth at above 32 degrees Celsius. For normal cultivation time, it is suggested to steam and sterilize materials from February to March, spawn-running period goes on from April to May, then safe over-summer could be realized from June to July and the fruiting could be achieved from August to November.
2. Choose suitable fruiting place: Good fruiting place should reach the condition of good heat and moisture preservation and desirable ventilation. Besides, fruiting place should be 30 meters away from animal houses. What’s more, fruiting place should also be away from any pollution sources, sewage, and should be close to water sources as well as holding convenient drainage and traffic condition.
3. Choose superior ingredients: Regarding Pholiota nameko cultivation, main ingredients of substrate include bran, corncob flour, gypsum and lime. Growers could choose broad-leaved, hard wood and it is optimal to stack them up and ferment before the utilization. Compared with fresh sawdusts, the fermented saw dusts are quick on aspect of spawn running and high in output. Moreover, bran and corncob flour should be fresh, free from any mold, worms or insects. Last, but not the least, bran which has gone through high-temperature function in summer should never be chosen or used.
1. Nutrition: Pleurotus abalonus falls under with wood-rotting fungus and it holds poor ability on decomposing wood. 3. Humidity: For Pleurotus abalonus cultivation, the preferred water content on compost is at 60%-65%, the optimal relative air humidity of cultivation room is at 60%, and 90% in fruiting room.
4. Air : Growth of mycelia has no strict requirements for air. However, sufficient oxygen is needed during the differentiation and growth period of sporocarps. Besides, poor ventilation promotes sporocarps that are in small caps and long stipes.
5. Illumination: Illumination is not required during the growth period of mycelia while certain scattered light is needed during the growth period of sporocarps.
